Plantain Lasagna

Having a dinner party soon? Want to surprise your guests with an Italian dish with a Nigerian twist? Then this Plantain Lasagna Recipe will do just fine!

Ingredients

6 Large very ripe plantain
1kg Minced beef
5 Eggs(optional)
1 Medium size red onion
5 Fresh garlic gloves(crushed)
1tsp Ground brown pepper
1tbsp Beef seasoning
1tsp Freshly ground nutmeg
1 Rodo (chopped)
Salt to taste
10g Fresh coriander (chopped)
1tsp Fresh thyme
Olive oil
Spring onions (chopped)


Method

Clean the plantain and slice each length into four or five slices. Arrange the plantain in the universal tray and  bake at 200 degrees for 10 minutes. (the plantain should be cooked but not dry). Once ready keep aside.

Put a little olive oil in the oven bowl, and heat it up for three minutes at the same temperature. Add the crushed garlic and chopped onions.

Stir and add the minced meat with all the spices stirring well.Then season to taste.

Add the coriander and chopped spring onions. Stir and cook for 30 minutes.

Remove from heat, and rub 1 teaspoon of olive oil in a clean oven proof bowl and arrange the plantain as a layer, followed by adding the mince meat sauce.

Brush some beaten eggs over and add grated all over the layer.

For 30-40 minutes (depending on how crispy you want it) Follow the settings section.
