Fruit Cake

Fruit cake has always been a christmas staple. Once you start seeing fruit cakes, then you know the festive seasons are already here. This fruit cake recipe is easy, and also ensures that you and you famile enjoy a slice this holiday too.

Preparation:

  1. Soak fruits in rum for a minimum of 1 month. Fruits (raisins and cranberries) can be soaked for up to 6 months.

  2. Soak prunes, dates, and walnuts in hot water 30mins before baking, then strain water out.

  3. In a medium saucepan, combine the butter with the raisins, cranberries, brown sugar, molasses and water and bring to a boil. Simmer over medium high heat for 3-4 minutes, stirring occasionally. Remove from the heat and let it cool.

  4. Add the eggs and the nuts to the butter mixture.

  5. Next, gently incorporate in the rest of the ingredients, and mix together.

  6. Transfer the batter into the desired pan. Using the cake plus functions, bake at 170C for about 45mins minutes.

  7. Let the cake cool completely. Fruit cake is best to serve the next day.

 

Ingredients:

228 g Flour

226 g Butter

100 g Brown sugar

45 g Molasses

3 Eggs

1 tsp Cinnamon powder

1 tsp Ground All spices

1 tsp Baking powder

1/2 tsp Salt

180 ml rum

Zest of 1 lemon

200 g Raisins

130 g Cranberries

150 g Prunes

100 g Dates

75 g Chopped walnuts
