Appliance: Miele Steam Combination Oven

Preparation:

1. Wash the chicken, score it, and set aside.

2. Combine all ingredients together.

3. Add ingredients to the chicken and marinate for at least 30mins.

4. Using the combination mode in the steam combination oven, bake the chicken for 30mins; 60% moisture, and 7mins full grill; 0% moisture at 170 degrees.

4 quarter part chicken

2tbsp fresh coriander, chopped

2tbsp fresh garlic, minced

2tbsp fresh onions, minced

1tsp salt

1tbsp white pepper

1tbsp black pepper

1tbsp dried thyme

1tbsp dried rosemary

1tbsp cayenne pepper

4-5tbsp Olive oil
