Plantain Bread

This delicious plantain bread is moist inside, while the coconut topping ensures a flavorsome crunch. Serve slightly warm with some coffee for breakfast, or with a glass of cold juice for brunch.

Duration: 30 - 40mins

Preparation:

  1. Melt the butter and espresso in a sauce pan

  2. Whist egg and set aside

  3. Combine dry ingredients together

  4. Mash plantain with a fork or potato masher

  5. Add the brown and white sugar to the plantain, followed by the melted butter and egg

  6. Gently incorporate the dry ingrdients together, along with the desiccated coconut

  7. Transfer the batter to a loaf pan and sprinkle some desiccated coconut to finish

  8. Using the moisture plus function of the Miele oven, bake at 170 degrees, shelf level 3, for 30 - 40mins

1tbsp espresso power

1½ cup all purpose flour

1 tbsp baking soda

¼ tsp salt

2 medium overripe plantain

½ cup sugar

2 tbsp brown sugar

1 large egg

85g desiccated coconut (optional)
